Description

A delightful Lemon Zest Babka topped with a luscious lemon glaze, perfect for any occasion.


Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 1 cup milk, warmed
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • Zest of 2 lemons
  • 1/2 cup lemon juice
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt.
  3. Add the yeast mixture, melted butter, eggs, and lemon zest to the flour. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  6. Preheat the oven to 350°F (175°C).
  7. Punch down the dough and roll it out into a rectangle.
  8. Spread lemon juice over the dough, then roll it up tightly.
  9. Cut the roll in half lengthwise and twist the two halves together.
  10. Place the twisted dough in a greased loaf pan and let it rise for another 30 minutes.
  11. Bake for 30-35 minutes until golden brown.
  12. For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the warm babka.
